Sourdough Nut Butter Cookies- 3 cookies in 1
These are delicious little cookies great for quick breakfasts or a snack on the go :) A great way to use discarded sourdough! This recipe has been adapted from the Traditional Cooking School by GNOWFGLINS. 3 Variations: Chocolate Chip Nut Butter Cookies, Chocolate Peanut Butter Cookies, Treasure in the Middle Cookies

Directions

#1 Chocolate Chip Nut Butter Cookies

INGREDIENTS

1 cup natural peanut butter or nut butter of choice
1/3 cup maple syrup (or 1/2 cup dry unrefined sweetener of choice)
1/4 teaspoon sea salt
1 teaspoon vanilla extract
1 egg
1/3 cup sourdough starter
1/4 teaspoon baking soda
1/2 cup chocolate chips

Preheat oven to 350 degrees Fahrenheit. Prepare cookie sheet. Combine all ingredients in a large bowl. Roll and press dough out on cookie sheets (about 1 tbsp of dough). Bake for about 10-12 minutes. Allow to sit on cookie sheet for 5 minutes then transfer to a cooling rack.

*the consistency of your dough will vary based on your sourdough and your nut butter. Sometimes I get a stiff dough and need to press the dough with a fork onto the cookie sheet and other times my dough is very sticky.

#2 Chocolate Peanut Butter Cookies

Same as #1 but omit the chocolate chips and add 1/4 cup of cocoa powder and 1/2 cup of shredded coconut.

#3 Treasure in the Middle Cookies

Same as #1 but omit the chocolate chips. After pressing the dough onto the cookie sheet, use the end of a wooden
spoon to make an indentation for the jam. Fill, then bake for about 10-12 minutes. Allow to sit on cookie sheet for 5 minutes then transfer to a cooling rack.
