The Sirloin Tip steak is carefully cut out of the center of the Sirloin tip also known as the knuckle, which is located on the front end of the rear leg. It is a little less tender than the Top Sirloin, which lies in the inside of the leg. Due to its leaner characteristics, the sirloin tip does well on the grill or broiled in the oven and it still contains plenty of marbling to promote juiciness and rich flavor. We find that it makes great kabobs, stew, or cubed steak for one pot medleys like stir fry or curry.
