Auntie Bethany's Curried Fruit Sauce

This is our favorite traditional side dish for our Holiday Ham. My sister-in-law brought this to a holiday gathering as a side for the ham. At first I thought it sounded a bit on the weird side....but turned out to be AMAZING and I request it at every holiday gathering!

You can vary the fruits. Sometimes I leave out the cherries entirely. Choose your favorite fruits!

INGREDIENTS

1/3 cup butter, melted
3/4 cup packed brown sugar
4 tsp curry powder
16 oz can pear halves, drained
16 oz can peach or apricot halves, drained
20 oz can pineapple chunks, drained
10 ounces maraschino cherries drained

Directions


Stir first 3 ingredients together and set aside. Drain fruit and place in a 2 quart casserole dish. Top with butter/sugar mixture.

Bake uncovered for 1 hour at 350 F. Serve warm with ham or poultry. Best if made ahead of time and allowed to stand. You can reheat on the stovetop. 

*I've been adding a few scoops of this to our ham in the last 15 minutes of cooking time. When it's combined with the juices from the ham it makes for an incredibly flavourfull ham gravy.

Maple Pork Tenderloin

Maple and mustard make a sweet-and-savory mahogany-colored sauce. A delicate note of sage gives it a wintery touch. Fresh thyme or rosemary also work if you prefer.

Jubilee Roasted Whole Chicken

This is amazingly simple! Just coat the chicken and throw it in the pot. If you really want to complicate this recipe then you can try throwing it in the pot from a distance, maybe 3-point range. For me, I just plop it in there and get delicious results every time :)
